Vegetable Pasta Salad
- 2 tablespoons Minos Extra Virgin Olive Oil
- 1 bunch of asparagus, trimmed and sliced
- 1 small eggplant, sliced
- 1 zucchini, thinly sliced
- 1 red capsicum, seeded and thinly sliced
- 1 Spanish onion, thinly sliced
- 500g pasta, cooked and drained
- 1 punnet cherry tomatoes, halved
- 1/4 cup pine nuts, toasted
- 2 tablespoons sliced basil
Garlic and Rosemary Oil
- 1 litre Minos Extra Virgin Olive Oil
- 4 cloves of garlic, sliced
- few sprigs rosemary
- Place Minos olive oil, garlic and rosemary in a saucepan. Heat until just below boiling point
- Allow to cool. Strain oil into jars or bottles.
- Add extra flavourings if liked. Seal well.
Use for drizzling onto salads, vegetables or bread. It also makes great dressings.
Note - Try other flavourings such as sliced fresh chillies.
